A jelly replica of Buckingham Palace made from Pimm’s – complete with jelly corgis – has been unveiled in the run-up to the street party marking the Queen’s official 90th birthday .
Pimm’s created the wobbly tribute – which took more than 200 man-hours to make – as the drinks brand prepares for its role as the official tipple of the ticketed celebration, The Patron’s Lunch.
The edible palace, which is a metre long, 15cm wide, 20cm high and weighs 35kg, was crafted using 35 litres of liquid – including Pimm’s No 1 Cup and champagne.
A team of three jelly artists, led by Tim Simpson, spent 200 hours creating this edible landmark: designing and laser cutting a model of the famous façade, transforming this into a jelly mould, concocting the recipe, balancing the ratio of Pimm’s and Champagne for the perfect wobble, and patiently waiting a whole day for it to set.
